Opened a bottle of Dom Pérignon Rosé 2000 right on the dot of mid-night, heading into 2011.
The bubbles blew up a beautiful crop of froth over the liquid, bursting right through the rim of the glass! On the nose, I sensed a gush of fruitiness galloping immediately into the nostrils, filling them in abundance. The bouquet filled the glass with every gyration of the wrist, as the salmon orangy fluid twirled.
On the palate, the acidity never seemed to end, what with the streak of smokiness and roast nut flavour that flowed continuously throughout its tenure in the glass, albeit there were hints of gamey notes (which weren’t exactly to my taste). Personally, it unfortunately didn’t land me the silky, creamy texture of the Vintage 2002. The drink remained spicy throughout though, and prickly at times. Overall, a spiritually-uplifting spirit.
